About Green Tea (Gyokuro Matsu)

Hello all.
I'm writing from Los Angeles, CA. I recently bought some delicious Gyokuro Matsu, but when I make it, it always seems to come out tasting bitter. Am I doing this wrong? Basically I've tried running it through hot water, pouring some in a cup of hot water and let it simmer, using a filter, but it's not working. It smells and looks amazing though
Any good tip from you genuine Japanese Green Tea drinkers?

According to one of my tea books, the water tempreature should be 50-60 C and lthe infusion time 1.5 to 2 minutes. The other says 60 C and three to five minutes.
But if it tastes bitter, a shorter infusion time will probably help.
(I was told once that the bitter taste comes from the tanines that are released when the water gets too cold.)

Green tea definately gets more bitter the longer it sits around, i.e. cools down. At least on my taste buds .



A difficult problem is easily solved by asking yourself the question, "Just how would the Lone Ranger handle this?"

Any tea I've ever had; the longer I steep it the more bitter in the tea. Short steep= not bitter.

all roads lead to rome,,, so don't they all lead away as well?
