one technique for life
I know that there is no technique in Aikido
however we have techniques to point us in the right direction, to give us the principles etc.
so if you had to pick one technique to practice exclusively what would it be?

for myself i would choose iriminage, it's quick, direct, feels so good when you nail it (once a month this happens)

The technique for me would be the realization that the body can do much much more if you train your mind to allow it. Or is the point that you must get your mind out of the way first?

In my opinion, Janet had the best answer.
However, if you want something that _seems_ less speculative, I have some good advice - and it is good because it comes from an utter beginner: I know very well what is difficult and what isn't for a beginner lol
So, you want to choose a tecnique, something safe and nearly good for all?
Ikkyo. but, you must be able to revert it in Shiho Nage TOO, and then revert Shio Nage in Ikkyo again - recursively and on both sides.
If you can move smoothly with this set: ikkyo-shihonage-ikkyo-shihonage-ikkyo they are going to be suitable for tons of occasions; and they are easy.
Don't force any on your opponent.
A shihonage follows an ikkyo only because your opponent raises back, a shihonage is followed by an ikkyo only because your opponent manages to turn your way.
ps don't shihonage turning on yourself - a waste of time. I have tried that training with a guy who was really intent on getting up from ikkyo and come against me with full force - taking him in shihonage is quite easy all the same and no need to make funny pirouettes.
