What is this move?

I know next to nothing about aikido, but I'm intrigued. I'd love to know what is the technique Steven Seagal is demonstrating at about 5:00 in this video: https://m.youtube.com/watch?v=aYpOIQUVT7U

He actually does two different techniques. The first one is called Nikyo and he uses it to momentarily unbalance his partner and then he continues with a Kote Gaeshi that has his partner making this breakfall in order to avoid his wrist or arm getting hurt...

Yep. He transitions from Nikyo to Kotegaeshi. Both are pretty basic, so if you start training, you will learn them pretty quickly. The transition is a little bit less common, though.

He actually uses three different techniques in all. When Uke first reaches out for Take Sensei's hand you can see him very quickly use a deflection called Suriage that allows him to cut away after the grab is made or deflect Uke's grab before it even happens. From there as stated before he transitions from Nikyo to Kotegaeshi.
