This is a good question - one that has always bothered me slightly. I hang mine after class, but on occasion will allow someone to fold it, although it always feels weird, somehow... like always letting your students pay for your meal or beer. I guess I don't think it proper, somehow. Pay your own way - fold your own hakima - Its about humility after all.

Although I am just a beginner, I have thought about this before. In my eyes folding your teacher's hakama is less about any type of subservience and more about a sign of respect and gratitude. Respect for the path the teacher had to take to learn what he has and gratitude for consenting to teach you.
IMHO, allowing someone to do something for you can also be an act of humility.

I don't think its that big of an issue. Each dojo has their own etiquette regarding this. I have folded a visiting instructors hakama on several occasions. I have had it done for me, also.
When a student folds my hakama after class, it is usually so they know how to do it when they get theirs. Also, it frees me up to answer questions and get changed quickly so we can go have a "beer waza" after class.
In my dojos it is a utilitarian motive primarily and then out of respect.

In my original dojo, sempai did it, usually a brownbelt who did it both out of respect and, as sensei looked at it, part of his/her training.
That ritual has not been introduced in this dojo, however. Maybe someday.....
