It's obvious in the clip that he doesn't know the uke because in the middle of explaining his technique, he checks the man's hakama for his name.

It's hard to imagine a better clip to accompany Ellis's well-written eulogy than one with Kuroiwa-sensei doing a demo, in his street clothes, with a completely unknown uke, extemporizing as he goes, and pulling off multiple of his unique koshinage without even messing up his jacket.
